Halfway to Oymyakon, Russia

Okay, so maybe I exaggerate a bit. Oymyakon, Russia is supposedly the coldest inhabited place in the world – according to Google anyway. With a -58 degree (F) temperature, I’d have to agree. But with a -13 temperature with a -25 windchill in the overnight forecast, Michigan is going to feel nearly half that cold. At the moment, it’s -5 with no windchill, but that will change over the next few hours.

And I’m cold!

I swear in this kind of weather, if there’s even the tiniest little crevice in your house, the frigid air will find it.

But there is one perk when you’re freezing. working in the kitchen – specifically near the stove – is always a good thing. Today, in more ways than one.

My son fell in love with the gluten-free waffles I make and asked if we could have them for supper. I’m always up for an easy meal and thought why not. But while gathering the ingredients to make the batter, I spotted something I bought a couple of months ago.

A super cute jar of cherry pie filling. Yes, I bought pie filling because I love the jar. And I will figure out a way to repurpose that jar so I can see it all the time.

Anyway…

I immediately thought of the can of whipping cream in my refrigerator – about the same time a picture of a Belgian waffle with strawberries and whipping cream came to mind, followed quickly by the funnel cakes Madam Rue serves at Mystic’s Carnival.

And I thought … I wonder how cherry pie filling and whipping cream would taste on a gluten-free waffle?

Cherry waffleGood. It tastes really good on a gluten-free waffle. Not sure why my camera takes photos with a golden tint, but it looked a lot better than this … and this looks pretty good.

Kristy, hubby and I just saw in his old home town of Cleveland that it’s -17 degrees, the coldest on record. I can’t even fathom it. Whatever you do, I hope you and your family stay warm! And enjoy the gluten-free waffles. Or is that cherry pie? 🙂

We are doing our best to stay warm, Karen. Some days, it’s easier than others, lol. That wind, when it’s bad, seems to find plenty of places to sneak into the house!

They’re gluten-free waffles … and they are delicious! I’m going to buy another jar of those cherries. They taste a lot better to me than the canned stuff, which always has a sort of tinny flavor. LOL though. As much of the filling as I put on, it probably did qualify for a pie. 🙂

good thinking Kristie…you can use the jar for paper clips, postage stamps, loose change etc

      Hi, Marge…
I apologize. I always seem to lose track of time when I’m writing, outlining, plotting, and editing. But yes, I’ll be using that jar for something along those lines. At first, I thought I’d try to melt a jarred candle down and put it, with a new wick, in it. But I’m thinking just any jar probably isn’t a good idea. 🙂
