My Favorite Things, Week 4 (x2)

apple pie - morguefileWe have already established the fact that I love fall. And one thing I especially enjoy during the cooler months is ice cream. Unfortunately, when the temperatures are soaring, rich desserts don’t always agree with my stomach. It’s probably why, if I’m going to crave comfort foods, it tends to be in the fall and winter.

One of my favorite ways to enjoy the treat is – of course – apple pie à la mode. Except I don’t always feel like making a pie. So when I was about twenty, I came up with a very acceptable alternative. But I have to warn you that as recipes go, this one isn’t very exact. You just have to experiment, and a lot depends on how many people you’ll be serving – and how sweet and/or spicy you like it. The ‘measurements’ below are for two sundaes.

Apple Upside Down à la Mode
2 peeled, diced apples (not a really tiny dice, but not chunks)

1/3 cup sugar (or to taste)
1 teaspoon cinnamon (or to taste)
2 tablespoons butter (a little more if you need it)

Melt butter in small saucepan. Add sugar and cinnamon and heat, stirring, until mixed well. Add apples. Bring to boil, then lower to simmer. Stir often until apples are tender and ‘sauce’ is thickened. Serve over vanilla ice cream.

You might be wondering about the name I gave to this recipe. It’s simple, really. The ice cream is usually on top. But this is a sundae and it’s on the bottom. 😀
